About 味噌ノート|手作り味噌の記録
Do you remember when to turn your homemade miso over, or when it's ready to eat?
Miso Notebook is an app that determines the "next steps" and "the day" for each batch of miso, and notifies you only on those days. It monitors your homemade miso, which takes 6 months to a year to ferment, from preparation to consumption and until the next batch is ready.
■ Personalized notifications for each batch
By registering your preparation date and type of miso, the app calculates the approximate date for turning the miso over, the date for the first taste test, the approximate date for when it's ready to eat, and the approximate date when it's becoming too mature.
Notifications are not daily, but only on the day of the scheduled date.
* 3 days before and on the day of turning the miso over (e.g., "2026 Rice Miso: 3 days until turning over")
* Tasting day (Initially on day 60 of preparation, every 45 days during the first half of maturation, and every 14 days starting 2 months before the optimal eating date)
* Estimated eating date, and the date when maturation is progressing too much
* Check-in day (2nd week of preparation, then every 2 weeks during the rainy season and summer, and every 3 weeks otherwise. If mold is removed, check again one week later)
Tapping the notification will open the screen for that miso. You can check upcoming notifications with dates in the settings screen.
■ Checking during maturation (surface mold/tamari)
Simply open the lid and check the surface, then tap "No change" once in the list. The next check-in date will be determined immediately. If mold is removed, press "Mold removed" and you will be notified one week later whether it has recurred.
■ Taste Test Stars Determine the Perfect Eating Time (Taste Test Curve)
After each taste test, rate the quality on a 5-star scale. The system displays the star ratings for each day elapsed, allowing you to:
* Stars are increasing → Leave until the next taste test.
* Stars have stopped increasing → It's almost time to start eating (even earlier than the recommended time).
* Stars have decreased → Start eating and refrigerate before it matures too much.
If the star rating is still increasing beyond the recommended time for each type, the perfect eating time is shifted back to the next taste test.
Your star rating is displayed alongside the "recommended curve" (calculated by subtracting the recommended eating time for each type), showing whether it's earlier than the recommended time, on schedule, or later, and indicating the expected date to reach 4 stars at this pace.
The highest aging period for a past batch will be automatically used as the recommended eating time for the next batch.
■ Remaining Miso and Next Brew Deadline
Enter the current amount (g) of miso you've started eating and your weekly usage amount, and the app will show you today's remaining amount and "how many weeks until you finish it." You can record the amount used with a single tap of "-100g" in the list, and the remaining amount, finish date, and next brew deadline will change immediately (the weekly usage amount is also learned from your usage history). It checks whether your aging miso will be ready to eat by the time you finish it, and if not, it will indicate "the next brew must be made by [Month] [Day]." It also notifies you two weeks before the finish date and reminds you to re-weigh miso that hasn't been weighed in two weeks (up to once a week).
During the cold brewing season in January and February, if you haven't started brewing this year yet, it will notify you once.
■ Includes Guidelines for Different Types of Miso
Approximate guidelines for turning and when each type of miso is ready to eat are provided, with sources.
■ Record and Review Your Miso Care
You can record turning the miso over, checking its condition, tasting, and removing mold, along with photos and notes. Entering the grams of soybeans, koji, and salt will also calculate the estimated salt content (%).
■ What It Can't Do (Listed First)
- The turning over date, the ideal eating date, and the estimated curves are "estimates" calculated from the preparation date, estimated number of months, and your tasting star rating. Actual maturation will vary depending on temperature and ingredients.
- Automatic acquisition of temperature and humidity, and automatic assessment of the miso's condition are not performed. Records are entered manually into a ledger.
- The remaining amount is an estimate based on the measured amount and the amount used per week (or the amount recorded with one tap). Re-measuring will correct the prediction.
- Automatic synchronization across devices is not performed.
■ What It Doesn't Collect
There is no account registration or login. All preparation records, photos, and settings are stored only on your device and are not sent to external servers. All features are available for free (banner ads will appear at the bottom of the screen). Since uninstalling the app will erase your records, it's a good idea to save important photos of your miso preparation on your device as well.
First, register your most recently prepared miso. Simply enter the preparation date, and you'll see the dates for turning the miso over and the first taste test.
