The first instruction is intended for people who work commercially with unpackaged or perishable food, including jobs in restaurants, kitchens, cafés, bakeries, butcher shops, catering, delivery services, food retail, care facilities, and daycare. This also applies to temporary staff, part-time workers, interns, and students. It covers work restrictions under Section 42 IfSG and reporting duties for people who handle food professionally. The first instruction itself remains valid indefinitely. When starting relevant work for the first time, the certificate must be no more than three months old.
