Sake Brewing

This app features a video of traditional sake brewing at Motomiya Sakamise, the brewery behind “Kaimei” sake in Ehime Prefecture. (Some brewing methods have since changed.) You can enjoy rare footage of techniques such as traditional fune pressing, which is seldom seen today and cannot be observed at major breweries. Motomiya Sakamise’s brewery building dates back to the Edo period and has over 200 years of history. The app also offers photographs of the interior of this historic building, a valuable part of Japan’s brewing heritage. It introduces the brewery’s carefully crafted sake, which has won numerous awards, as well as rice cultivation using aigamo ducks.
