■ Letting things fall is harder than catching them
Wrong ingredients drop too. Step aside and let them pass.
Burnt patties, wilted lettuce, napkins, ice cubes - one bad catch and the customer stops waiting.

■ Where you catch it becomes the center of gravity
An ingredient does not vanish into a score. It becomes a layer of your burger.
Catch everything on the left and the tower leans left until it topples.
Catch once on the other side and the balance comes back. Catch dead center and the whole stack straightens up.

■ One axis, one thumb
Put a finger anywhere and slide left or right.
Move too fast and the tower sways - dodging has a price.
Shake quickly side to side to knock the top layer off.
