For each product, Doseo cross-references the additives present with the maximum legal limit for its category (Regulation (EU) No 1333/2008) and with the acceptable daily intake (ADI) defined by science (EFSA and JECFA/WHO). The result is simple: how many portions you can eat per day before reaching the daily limit — adjusted to your weight.

In practice, manufacturers use smaller quantities, so the actual values are typically more permissive — what you see is a safe limit.
