Apulian cuisine is characterized above all by the importance given to the raw materials, both land and sea, and by the fact that all the ingredients have the precise purpose of enhancing, and not altering, the basic flavors of the dishes.

One of our specialties is orecchiette, the first pasta dish that is symbolic of Apulian cuisine, the existence of which has been documented since 1500.
