The Food Hygiene and Sanitation Book is an Indonesian Free Book application which contains a summary of the theory of Food Hygiene and Sanitation. Food Sanitation Hygiene is the control of food factors, people, places and their equipment. The implementation of ready-to-eat food is an effort to supervise, protect and improve the quality of hygiene and sanitation for ready-to-eat food in order to realize a healthy, safe and secure food management (Permenkes No.7 of 2019) Everyone involved in the food chain is obliged to control the risk of harm to food, whether they come from materials, equipment, production facilities, or from individuals so that food safety is guaranteed (Food Law No. 18 of 2012).

Every person who is responsible for carrying out activities in the food chain which includes the process of production, storage, transportation and distribution of food is obliged to meet the sanitary requirements (PP No.28 of 2004 concerning Food Safety, Quality and Nutrition). Food management in food services must apply the principles of food sanitation hygiene starting from the selection of food ingredients to serving food (Permenkes 1096 of 2011).
